Aunty Sarah's Snoek



RECIPE: Aunty Sarah's Baked Snoek With Suurvygie and Lemon

Aunty Sarah Niemand lives in Buffeljagsbaai, a small fishing hamlet on the Cape's southern coast. Sarah was born here and hails from generations of proud women harvesters. Her very first memories are of going to pick sea grass and alikreukal from the rocks with her Ma and her Ouma. HerE she shares her recipe for snoek basted in the suurVygie Jam from her coastal pantry

Ingredients

4-6 Snoek portions (Fish With A Story)

1 tbsp olive oil

5 tbsp Suurvygie Jam

zest & juice of 1 lemon

salt & pepper

 

Method

  1. Preheat the oven to 200°C.

  2. Line a baking tray with grease-proof paper. Drizzle with a little olive oil. Pop the fillets onto the tray and season well.

  3. Mix the jam with the lemon and stir well. Brush half over the fish and bake in the oven for 8-10 minutes until fish flakes.

  4. Drizzle over the remaining jam and lemon, and serve with rice and salad.

TIP: This recipe is also so easy peasy for the braai. Use either on fillets or a side of snoek, and cook until caramelised (about 8-10 minutes).

It has long been our source of food, because in our small village there are no shops, there is no butchery, not even a school. The sea provides everything for us. ...
