Fresh fillet of Fish With A Story
squeeze of lime
salt & pepper
drizzle of olive oil
handful of coriander
1 chilli, optional
handful of spring onions, chopped, optional
diced mango, optional
Thinly slice or dice the fresh fish.
Season with salt & pepper.
Squeeze over some juicy lime, drizzle with your favourite olive oil and a good handful of coriander leaves.
Leave for 10 minutes. The flesh turns opaque macerating in the citrus.
Taste for seasoning & enjoy!
Tip: If you like a bit of heat, add a good sprinkling of chopped chillies and diced mango for something different and delicious.
