CHILLI MOSSEL SPAGHETTI



RECIPE: CHILLI MOSSEL SPAGHETTI

FROM COASTAL WATERS TO THE PANTRY ... 

... And with a few more ingredients and you have a delicious store cupboard masterpiece to add to your  repertoire. Pickled Mussels lovingly crafted by women in small-scale fishing communities – are great to stock up on for al fresco eating, served on toast (try our Pickled Mussel Bruschetta recipe), or as a drinks accompaniment served with flaked chilli & a squeeze of lemon. In paella too, with tons of garlic, parsley and a jar of pickled kreef for a seafood feast. Why not?

Coastal Pantry: Pickled Mussels With A Story

Occasion:
 Easy weekday, Effortless entertaining




Ingredients

1 jar of Pickled Mussels With A Story from the Coastal Pantry 

1 packet of spaghetti

3 red chillies, thinly sliced

1 red onion, thinly sliced

1 clove of garlic, minced

3 tbsp of olive oil

juice and zest of 1 lemon 

handful of chopped parsley, basil or both

salt & pepper to taste

Method

  1. Drain the mussels.

  2. Cook the spaghetti according to package instructions and drain.

  3. Heat the olive oil in a deep frying pan and add the chilli, onion and garlic. 

  4. Fry for 2 minutes then add the mussels. Fry for another 2 minutes and toss the spaghetti through.

  5. Add the lemon zest and juice, scatter with the herbs.

  6. Season with salt and pepper.
