PICKLED MUSSEL BRUSCHETTA



RECIPE: PICKLED MUSSEL BRUSCHETTA

FROM COASTAL WATERS TO THE PANTRY ... 

Pickled Mussels lovingly crafted by women in small-scale fishing communities – are effortlessly transformED into delectable eats for entertaining with this recipe.

Prep time: 5 minutes

Cooking time: 15 minutes

Occasion:
 Easy weekday, Effortless entertaining, Braai snack




Ingredients

1 jar of Pickled Mussels
1 jar of roasted peppers
½ baguette or ciabatta
1 clove garlic, cut in half
2-3 tbsp olive oil
a squeeze of lemon juice
handful of basil leaves
salt & pepper to taste

Method

  1. Drain the Pickled Mussels, and dry on a paper towel.
  2. Cut slices of the bread. 
  3. Heat a griddle pan with a drizzle of oil. Place slices of the bread on the griddle and cook for 3-4 minutes on each side until crisped. 
  4. Rub each slice of bread with the cut side of the garlic.
  5. Pop a slice of roasted pepper on each crunchy piece of bread topped with a mussel or two.
  6. Scatter with basil leaves and drizzle with some olive oil. Season to taste.
