Method
- Drain the Pickled Mussels, and dry on a paper towel.
- Cut slices of the bread.
- Heat a griddle pan with a drizzle of oil. Place slices of the bread on the griddle and cook for 3-4 minutes on each side until crisped.
- Rub each slice of bread with the cut side of the garlic.
- Pop a slice of roasted pepper on each crunchy piece of bread topped with a mussel or two.
- Scatter with basil leaves and drizzle with some olive oil. Season to taste.
