warm fish salad



RECIPE: warm fish salad

Ingredients

leftover cooked Fish With A Story, flaked

new potatoes, a handful per person

2 handfuls of frozen peas or chopped green beans

a few tbsp of mayonnaise (bought or home-made) or olive oil

handful of parsley or dill, chopped

½ cucumber, cut into chunks

1–2 avocado, sliced

1 lemon

handful of cherry tomatoes, halved

1–2 radishes, sliced (optional)



Method

  1. Boil new potatoes until tender. Throw in frozen peas or  green beans for the last minute or two and drain well.

  2. Squeeze some lemon into a few spoons of mayonnaise. Add to the potatoes (enough to coat the potatoes) with a good handful of chopped parsley or dill.

  3. Add the cucumber, avocado and cherry tomatoes. Add sliced radish if you have.

  4. Flake in the  fish. Season well and serve immediately.

Chef's tip:  Boiled eggs cut in half make a delicious addition to this salad too.
