Ingredients
leftover cooked Fish With A Story, flaked
new potatoes, a handful per person
2 handfuls of frozen peas or chopped green beans
a few tbsp of mayonnaise (bought or home-made) or olive oil
handful of parsley or dill, chopped
½ cucumber, cut into chunks
1–2 avocado, sliced
1 lemon
handful of cherry tomatoes, halved
1–2 radishes, sliced (optional)
Method
- Boil new potatoes until tender. Throw in frozen peas or green beans for the last minute or two and drain well.
- Squeeze some lemon into a few spoons of mayonnaise. Add to the potatoes (enough to coat the potatoes) with a good handful of chopped parsley or dill.
- Add the cucumber, avocado and cherry tomatoes. Add sliced radish if you have.
- Flake in the fish. Season well and serve immediately.
Chef's tip: Boiled eggs cut in half make a delicious addition to this salad too.
