RECIPE: BOKKOM & TOMATO SALAD

FROM COASTAL WATERS TO THE PANTRY ... 

BOKKOMS – lovingly PREPARED by women in small-scale fishing communities. These sundried harders can be quite daunting by the nature of their looks. But don’t be too judgy, they will upgrade your basic tomato salad to new heights, just give them a try. The trick is to shred the Bokkom finely – it’s rich and very salty, so needs distribution in a salad.  ThIS saltiNESS makes a magical combo with the acidity of the tomato and soft, creamy cheese. Try this recipe with ricotta or cream cheese, it's just as delicious.

Coastal Pantry: Bokkoms With A Story

Ingredients

Bokkoms With A Story from the Coastal Pantry 

1 tub of smooth cottage cheese

1 clove of garlic, minced

juice and zest of 1 lemon

6-8 large, ripe tomatoes

3 tbsp of olive oil

2 tbsp of chopped chives

2 spring onions, thinly sliced

large handful of basil leaves

salt & pepper to taste

Method

  1. Remove two Bokkoms from the bunch and pick the dried meat from the bone. 

  2. Cut the tomatoes into bite-sized pieces and place in a bowl.

  3. Add the two shredded bokkoms, olive oil, pepper, chives and spring onions. Mix well and leave to marinate while preparing the cottage cheese.

  4. Place the cottage cheese in a bowl and add the garlic, lemon zest and lemon juice. Mix well.

  5. Place a serious dollop of cream cheese on each plate and spread it out with the back of a spoon.

  6. Mix the basil into the salad and divide it between the plates, placing the salad on the cream cheese.

  7. Add salt to taste, remembering the bokkoms are salty.
