Coastal Pantry: Bokkoms With A Story
Occasion: Easy weekday, Effortless entertaining, Braai dish
Method
- Remove two Bokkoms from the bunch and pick the dried meat from the bone.
- Cut the tomatoes into bite-sized pieces and place in a bowl.
- Add the two shredded bokkoms, olive oil, pepper, chives and spring onions. Mix well and leave to marinate while preparing the cottage cheese.
- Place the cottage cheese in a bowl and add the garlic, lemon zest and lemon juice. Mix well.
- Place a serious dollop of cream cheese on each plate and spread it out with the back of a spoon.
- Mix the basil into the salad and divide it between the plates, placing the salad on the cream cheese.
- Add salt to taste, remembering the bokkoms are salty.
