RECIPE: fish jaffle toastie

 this SIMPLY SUBLIME TOASTIE by chef margot janse useS left-over fish WITH A STORY. flakeD and mixED with your favourite flavours. BETWEEN TWO SLICES OF BREAD, AND cooked in a toastie iron or jaffle maker.

Ingredients

1 cup left-over cooked Fish With A Story, flaked

¼ red onion, thinly sliced

handful of coriander and basil leaves, chopped

1 gherkin, diced

chilli sauce/chutney/atjar to taste

¼ cup grated mozzarella

salt and pepper

4 slices of white bread

melted butter


Method

  1. Put the fish with the onion, herbs, gherkin, chilli sauce/chutney/atjar (or all 3) and mozzarella in a bowl and mix well. Season with salt and pepper.

  2. Divide the mix between 2 slices of bread and place the other 2 slices on top.

  3. Brush the inside of the toastie iron or jaffle maker with melted butter and place the sandwiches inside.

  4. Cook over a fire or a gas stove for 4 –5 minutes on each side until golden.

  5. Eat while hot!
