oven-baked fish fillet



RECIPE: oven-baked fillet of Fish with a story WITH CHERRY TOMATOES, ROAST PEPPERS, CAPERS, OLIVES AND GARLIC

Easy and delicious ONe-dish meal, great with any largish fish fillets. For smaller fish, adjust the oven roasting time or bake whole.

Ingredients

1 fillet Yellowtail (Fish With A Story) from our convenience range

½ cup cherry tomatoes

1 red pepper, roasted, skin removed, torn into pieces

¼ cup olives, pips removed and torn into smaller pieces

2 tbsp capers

herbs of choice (I love marjoram and thyme)

6 cloves of garlic, peeled, big ones cut into half

olive oil

salt & pepper

lemon wedges



Method

  1. Pre-heat oven to 180C

  2. Grease an oven tray with some olive oil.

  3. Place the fillet of fish in the oven tray and scatter tomatoes, red pepper, olives, capers, herbs and garlic over and next to it.

  4. Drizzle with olive oil and season with salt and pepper.

  5. Bake the fish in the oven for 20 minutes for a 400 g fillet. Add 3–4 minutes extra for every 100 g above.

  6. Squeeze lemon over and serve.
