RECIPE: Smoorvis with a story

A South African dish traditionally prepared with snoek, but any smoked fish may be used. Yellowtail also works brilliantly! Serve it with homemade brown bread and atjar or grape jam.

Works well with: Yellowtail, Snoek, any leftover Fish With A Story

Tip: Use purposefully smoked or leftover braai'ed fish for this recipe.

Ingredients
500 g smoked Fish With A Story, boned, skinned & flaked 
500 ml cooked rice 
2 onions, finely sliced 
50 g butter 
30 ml sunflower oil 
2 potatoes, peeled & cut into tiny dice 
2 large, ripe tomatoes, skinned & chopped 
1–2 chillies, very finely chopped, or 2–5 ml chilli powder 
60 ml sultanas (optional) 
ground black pepper  
lemon juice, to serve
chopped parsley, to serve

Method

  1. Heat butter and oil in a large, heavy frying pan and saut'ee onion until golden brown.

  2. Add potato, tomato, chilli, sultanas and pepper and cook for a little longer until the potato starts to brown. 

  3. Mix in the fish and rice, cover and cook gently over low heat until the potato is cooked through. 

  4. Tip the smoorvis into a hot serving dish, season with a good squeeze of lemon juice and garnish with chopped parsley.
