Tip: Use purposefully smoked or leftover braai'ed fish for this recipe.
Ingredients
500 g smoked Fish With A Story, boned, skinned & flaked
500 ml cooked rice
2 onions, finely sliced
50 g butter
30 ml sunflower oil
2 potatoes, peeled & cut into tiny dice
2 large, ripe tomatoes, skinned & chopped
1–2 chillies, very finely chopped, or 2–5 ml chilli powder
60 ml sultanas (optional)
ground black pepper
lemon juice, to serve
chopped parsley, to serve
Method
- Heat butter and oil in a large, heavy frying pan and saut'ee onion until golden brown.
- Add potato, tomato, chilli, sultanas and pepper and cook for a little longer until the potato starts to brown.
- Mix in the fish and rice, cover and cook gently over low heat until the potato is cooked through.
- Tip the smoorvis into a hot serving dish, season with a good squeeze of lemon juice and garnish with chopped parsley.
