RECIPE: SUMPTUOUS SOUR FIG CEVICHE

FROM COASTAL WATERS TO THE PANTRY ... 

by reconstituting DRIED SOUR FIGS (SUURVYGIES) – lovingly crafted by women in small-scale fishing communities – you can make jam or jelly, but even more simply, when squeezed over raw fish it adds the umami level. The salty acidity in the vygies is a refreshing change to lemon or lime.

Coastal Pantry: Dried Sour Figs With A Story

Ingredients

1 jar of Dried Sour Figs With A Story from the Coastal Pantry 

300 g Yellowtail With A Story, filleted, thinly sliced – see our how-to-fillet video here 

zest of 1 lemon 

2 spring onions, thinly sliced

1 red chilli, thinly sliced

salt & pepper to taste

Method

  1. Place the Dried Sour Figs in a small saucepan with a few spoons of water. Close with a lid and place over a low flame/heat for 5 minutes to soften the figs. 

  2. Cut a small piece from the end of each fig and squeeze the sour fig gel from the inside into a small bowl.

  3. Divide the thinly sliced fish between serving plates and cover with the sour fig gel. 

  4. Scatter the spring onions, chilli and lemon zest over and season to taste.
