Ingredients
1 jar of Dried Sour Figs With A Story from the Coastal Pantry
300 g Yellowtail With A Story, filleted, thinly sliced – see our how-to-fillet video here
zest of 1 lemon
2 spring onions, thinly sliced
1 red chilli, thinly sliced
salt & pepper to taste
Method
- Place the Dried Sour Figs in a small saucepan with a few spoons of water. Close with a lid and place over a low flame/heat for 5 minutes to soften the figs.
- Cut a small piece from the end of each fig and squeeze the sour fig gel from the inside into a small bowl.
- Divide the thinly sliced fish between serving plates and cover with the sour fig gel.
- Scatter the spring onions, chilli and lemon zest over and season to taste.
